Job Overview:

The primary mission of Hill Top Café at Landstuhl Regional Medical Center (LRMC) is to provide high quality nutritious food service in to meet the special nutritional needs of patients, the warfighter and other customers within the hospital with flexible, efficient, and cost-effective services.


The Production Planner enters food additions, deletions, updates, and changes to the master menu, as well as additional food production planning data such as delivery schedules, acceptability percentages, choice of alternate ingredients, food items, storage/delivery locations, etc.

The Production Planner calculates food quantities for dining facilities. Prepares monthly reports and other documents. Logs food service data used to make daily census projections at dining facility.

Research previous census and adjusts figures based on a day of week, time of month and popularity of menu using the web-based Government systems.

Prepares Report of Item Discrepancy on any over, short, damaged, or lost shipments from the vendor to the delivery point.

Maintains schedules for daily, weekly, and required computer processing functions. Performs daily NMIS production functions for all NMIS subsystems and daily system backups. Maintains production recipes updates for daily use.

Manually maintains and separates computer printouts of recipes, labels, ingredient summaries and related listings according to daily meals and days of the week.

Reviews documents to ensure information coded has been correctly printed. Types a variety of miscellaneous material such as nonstandard recipes, menus, schedules, and similar material.


Qualifications:

Experience:Within the past two (2) years, the Production Planner shall have at least one (1) year experience in planning production for a food service operation, preferably in an U.S. Military DFAC

Knowledge and Skills: Able to speak and read English (equivalent to Level III)


Responsibilities Include (but are not limited to)_: _

  • Order, receive, store and issue subsistence to support safeguard of perishable and semiperishable foods. Immediately receive, store, and maintain accountability of all perishable and semiperishable foods.
  • Perform inventory management.
  • Maintain dining facility account status within allowable tolerance.
  • Perform accounts management using current automated system AFMIS, which includes safeguarding subsistence and inventory management, and perform manual accounting and data collection when automated system fails.
  • Responsible for maintaining the patient menus under the guidance of a Government Registered Dietitian.
  • Assist with all inventories: daily, weekly, monthly, semiannual, and annual.
  • Manually extends nonstandard recipes, making conversions such as teaspoons to cups, cups to gallons, and so forth.
